Whole-Grain Corn Bread

Corn bread is a classic staple of American cuisine. This sweet, easy-to-make corn bread is the perfect side for any meal, a must for picnics, or and great snack for when you're on the go.

Ingredients

11/2 cups whole-grain corn flour
11/2 cups whole-wheat flour
21/2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons honey
11/2 cups buttermilk
1/4 cup vegetable oil
2 eggs, lightly beaten

Preparation

Preheat oven to 400°F. Coat an 8-inch square pan with cooking spray. In a medium bowl, combine corn flour, wheat flour, baking powder, and salt. In a small bowl, mix together honey, buttermilk, oil, and eggs. Gently stir wet mixture into dry mixture until just moistened. Pour batter into pan and bake for 20 minutes or until a toothpick inserted in the center comes out clean. Cut into 12 squares and serve.
