Serving size: 2 tablespoons
1 egg white
1/2 cup packed light brown sugar
1/4 cup butter (melted butter that has cooled but is still liquid)
2 cups roasted whole almonds
Preheat oven to 300°F. Place egg white in medium mixing bowl. Beat until it forms soft peaks. Add brown sugar, beating until mixture is stiff and shiny. Stir in melted butter. Carefully fold nuts into mixture until they are evenly coated. Spread evenly onto jelly roll pan or other baking sheet. Bake about 40 minutes, stirring every 10–15 minutes, until egg mixture is dry and nuts are crunchy. Enjoy as a snack, or use to garnish salads and desserts as desired.
