Who doesn't enjoy an omelet on a lazy morning? This version uses an egg substitute, several spices, and spinach for a healthier — but still tasty — breakfast treat.

Total time: 12–13 minutes
Yield: 1 serving
Serving size: 1 medium omelet
1/2 cup egg substitute
3/4 cup fresh spinach leaves, washed, with stems removed
1/4 teaspoon onion powder
Dash nutmeg
Dash black pepper
1/4 cup grated cheddar cheese
Combine egg substitute, spinach, onion powder, nutmeg, and pepper. Cook egg mixture in small nonstick skillet coated with cooking spray until partially set, about 4 minutes. Flip and continue cooking 2–3 minutes. Reduce heat to low. Put cheese on top of omelet, fold omelet, and cook until cheese melts and egg substitute has reached desired consistency.
