Southwest Pudding

Preparation time: 10 minutes
Cooking time: 15–20 minutes

Yield: 4 servings
Serving size: 1⁄2 cup


1 cup sugar
2 tablespoons cornstarch
1⁄8 teaspoon salt
2 cups 1% milk
2 ounces (2 squares) unsweetened chocolate, chopped finely or grated
1 large egg, beaten
1⁄8 teaspoon ground red pepper, more if desired
1⁄2 teaspoon ground cinnamon
2 tablespoons butter, softened
1 teaspoon vanilla extract


In a medium saucepan, combine sugar, cornstarch, and salt. Stir in the milk and chocolate. Cook over low heat, stirring constantly, until mixture thickens. Remove from heat and cool slightly. Slowly add beaten egg to mixture, stirring constantly to bring egg up to temperature and incorporate it into the pudding. Return pan to low heat. Add red pepper, cinnamon, butter, and vanilla extract and cook, stirring constantly, for another 2 minutes. Pour into individual serving dishes or a large bowl. Cover with plastic wrap, pushing it down to touch top of pudding to prevent a skin from forming. Chill completely before serving.
