Potato Soup

Comfort food doesn’t have to mean slaving over the stove for hours on end. This soothing soup is simple to prepare — and it’s a perfect way to warm up on a cold winter’s day.

Preparation time: 10 minutes
Cooking time: 15–20 minutes
Total time: 25–30 minutes

Yield: 4 servings
Serving size: about 1 cup

Ingredients

1 medium onion, diced
1 tablespoon vegetable oil
6 large potatoes, peeled and diced
3/4 cup water
2 1/2 cups 1% milk
1 tablespoon butter
Salt and pepper to taste

Preparation

Sauté onions in vegetable oil in medium saucepan over medium heat until tender. Add potatoes and water (water should cover potatoes — add more if needed). Bring to a boil, reduce heat to low, cover, and simmer until potatoes are tender, about 15 minutes. Add milk, butter, and salt and pepper. Heat through but do not boil. Serve immediately.
