Pork Tenderloin

Cooking time: 20–30 minutes
Total time: 25–35 minutes

Yield: 4 servings
Serving size: 1 piece pork and 1/4 of apples and onions

Ingredients

1 pork tenderloin (about 1 3/4 pounds)
Freshly ground black pepper to taste
2 teaspoons minced garlic
2 medium onions, cut into chunks
2 medium Granny Smith apples, peeled, cored, and sliced

Preparation

Preheat oven to 425°F. Trim excess fat from tenderloin and rub with pepper and garlic. Place onions and apples in the bottom of a roasting pan. Place seasoned tenderloin on top of apples and onions. Insert a meat thermometer into tenderloin and cook until it reaches an internal temperature of 155°F, about 25–30 minutes, depending on the thickness of the roast. Remove from heat and let stand for 5 minutes. Cut roast into 4 pieces and serve with apples and onions.
