After a long day at the office, you don't want to slave away in the kitchen to get supper on the table. You need something quick and easy — and this delicious pasta dish fits the bill.

Yield: 4 servings
Serving size: 1 cup pasta with 1/4 of tomato sauce
1/2 pound uncooked linguini
2 tablespoons olive oil
4 large ripe tomatoes, chopped
3 teaspoons minced garlic
1 tablespoon finely chopped fresh basil (or 1 teaspoon dried basil)
1/2 cup chopped fresh parsley
Salt and pepper to taste
1/4 cup shredded Parmesan cheese
Cook linguini in a large pot of boiling water until cooked but still firm (about 10 minutes). Drain and keep warm. While pasta is cooking, heat oil in a skillet. Add tomatoes, garlic, and basil and cook for 5–7 minutes, stirring constantly. Remove from heat and stir in parsley, salt, and pepper. Serve sauce over pasta and top with Parmesan cheese.
