Old-Fashioned Custard

Custard has held a place of honor at the American dessert table for generations. This simple custard recipe makes a delicious treat with a minimum of work.

Preparation time: 15 minutes
Cooking time: 25–30 minutes

Yield: 4 servings
Serving size: 1 cup

Ingredients

4 eggs
1/2 cup sugar
2 teaspoons vanilla extract
3 cups skim milk, heated until very hot
Boiling water for water bath
Ground cinnamon for garnish

Preparation

Preheat oven to 350°F. Place oven rack in center position. Lightly butter 4 custard cups (or spray with vegetable spray). Set custard cups into a large glass baking dish. In a large bowl, beat eggs until well mixed. Add sugar and vanilla extract. Mix in hot milk. Pour egg mixture into custard cups. Pour boiling water into glass pan that holds custard cups, making sure the water comes half-way up the sides of the custard cups. Bake 25–30 minutes until set around the edges but loose in the center. Remove from oven and immediately remove custard cups from water bath. Serve warm or refrigerate for up to 2 days. Garnish with cinnamon just before serving.
