4 pieces flatbread, 6 inches across
2 tablespoons olive oil
1 cup reduced-sodium tomato sauce
1 1/2 cups shredded part-skim mozzarella cheese
1 1/2 cups sliced wild mushrooms, sautéed in 1 tablespoon butter until soft. If wild mushrooms are unavailable, substitute mushroom of your choice.
Heat grill. Brush both sides of each piece of flatbread with olive oil and place directly on the grill. Turn heat to low. (If using charcoal, let coals burn long enough so heat is low). Grill each side of flatbread for 1–2 minutes, or until the bread gets crispy. Remove from grill and quickly layer the tomato sauce, cheese, and mushrooms onto the flatbread, putting a quarter of each ingredient on each piece of bread. Return bread to the grill and cook until the cheese is melted, 1–2 minutes.
