Green Chile Cornbread

Preparation time: 20 minutes
Cooking time: 30 minutes

Yield: 8 servings
Serving size: 1 square


2 fresh chiles
Nonstick cooking spray
1 cup yellow cornmeal
1⁄4 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
3⁄4 teaspoon salt
4 ounces grated Cheddar cheese
2 large eggs
1 cup buttermilk
1⁄4 cup melted butter


Place chiles in broiler and broil, turning every few minutes, until they are blackened on all sides. Cool, peel, seed, and chop. Preheat oven to 400˚F. Spray an 8" × 8" pan with nonstick cooking spray. Combine cornmeal, sugar, baking powder, baking soda, and salt in a medium bowl. Add cheese and stir to blend. In another bowl, beat eggs. Add buttermilk and butter, and blend. Add egg mixture to cornmeal mixture and stir until just blended. Fold in chiles. Place batter in pan. Bake until bread is golden on top and a toothpick inserted into the center comes out clean, about 30 minutes. Remove from pan and cool.
