Fresh Blueberry Pie

Preparation time: 25 minutes

Yield: 8 servings
Serving size: 1/8 of pie


1 baked pie shell
1 quart fresh blueberries, washed, stems removed
1 cup water
1 cup granulated sugar
3 tablespoons cornstarch
2 tablespoons butter


Combine water, cornstarch, sugar, and 1 cup blueberries in a medium saucepan. Cook over low heat until thickened, about 15 minutes. Remove from heat and stir in butter. Stir in remainder of blueberries and place mixture in pie crust. Chill at least 2 hours.
