Cranberry Oat Bars

Enjoy the taste of cranberry and orange in these simple dessert bars.

Ingredients

Cooking spray
2 cups fresh cranberries
3/4 cup granulated sugar
2 tablespoons grated orange peel
1 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 cups quick-cooking oats
1 cup light brown sugar, packed
1 teaspoon baking powder
1⁄4 teaspoon salt
3/4 cup butter

Preparation

Preheat oven to 350°F and coat a 9” x 9” baking pan with cooking spray. In a medium saucepan over medium heat, combine cranberries, granulated sugar, and orange peel. Bring to a boil, then reduce heat and simmer until the mixture is thickened (5–10 minutes). In a mixing bowl, combine all-purpose flour, whole wheat flour, oats, brown sugar, baking powder, and salt. Cut in butter using a pastry blender or fork. Spread half the flour mixture into the baking pan and press into pan. Spread the cranberry mixture evenly over the flour mixture, and top with the remaining flour mixture. Bake for 15–20 minutes, or until the top is lightly browned. Cool and cut into 25 squares.
