For many people, chocolate is one of life's great pleasures. The next time you have a chocolate craving, indulge it with a serving of this homemade but easy-to-prepare pudding cake.

Yield: 4 servings
Serving size: about 3/4 cup
1/2 cup all-purpose flour
1/4 cup sugar + 1/3 cup sugar
1 tablespoon + 2 tablespoons unsweetened cocoa powder
3/4 teaspoon baking powder
1/4 cup skim milk
1 tablespoon vegetable oil
1/2 teaspoon vanilla
1/4 cup chopped pecans
3/4 cup boiling water
In a small bowl, stir together flour, 1/4 cup sugar, 1 tablespoon cocoa powder, and baking powder. Add milk, oil, and vanilla and stir until blended. Stir in pecans. Place batter in a one-quart casserole dish. Combine remaining 2 tablespoons of cocoa powder with remaining 1/3 cup sugar and boiling water. Pour mixture slowly over batter. Bake at 350°F for 30 minutes or until a toothpick inserted into cake comes out clean. Serve warm or cold.
