Chicken Breasts in Chocolate Sauce

Ingredients

4 skinless, boneless chicken breasts
1/4 cup vegetable oil
1/2 cup chopped sweet onion
1/2 cup chopped bell pepper
2 teaspoons minced garlic
1 ounce unsweetened baking chocolate
1 tablespoon chili powder (or to taste)
1/4 teaspoon black pepper
1/4 teaspoon salt
1 15-ounce can low-sodium tomato sauce

Preparation

In a large skillet over medium heat, sauté the chicken in the oil, turning to brown on both sides. Remove the chicken and set aside, reserving the oil in the pan. Add the onion, bell pepper, and garlic to the pan and cook, stirring, until tender. Add the chocolate, chili powder, black pepper, salt, and tomato sauce and stir until the chocolate melts. Return the chicken to the pan and simmer until the chicken is cooked through and tender, about 20 minutes.
