Rubbing meat with a spice mixture before grilling or roasting it adds a ton of flavor — without piling on fat and calories. The next time you're grilling chicken or ribs, give them a Cajun kick with this spicy rub.
Preparation time: 5 minutes
Yield: 5–6 tablespoons
Serving size: 1 teaspoon
2 tablespoons paprika
1/2 teaspoon ground allspice
1/4 teaspoon garlic powder
1 teaspoon ground red pepper
1 teaspoon dried thyme leaves
2 teaspoons ground coriander
1 teaspoon salt
2 teaspoons freshly ground black pepper
1 tablespoon ground cumin
In a small bowl, combine paprika, allspice, garlic powder, red pepper, thyme, coriander, salt, black pepper, and cumin. Mix well and store in an airtight container. Use on grilled chicken or ribs.
Note: To reduce the sodium in this recipe, omit the salt.
