Blueberry Crisp

High in fiber and vitamin C, blueberries are a midsummer tradition. You can whip up this sweet and easy dessert with berries from the store — or go out and pick your own!

Preparation time: 10 minutes
Cooking time: 30 minutes
Total time: 40 minutes

Yield: 6 servings
Serving size: about 1/2 cup

Ingredients

4 cups fresh blueberries, washed and drained
1 tablespoon lemon juice
3/4 cup packed brown sugar
1/2 cup all-purpose flour
1/3 teaspoon ground cinnamon
3 tablespoons unsalted margarine, brought to room temperature
3/4 cup rolled oats

Preparation

Preheat oven to 350°F. Grease a 1 1/2- to 2-quart baking dish with vegetable cooking spray. Spread the blueberries on the bottom of the pan and sprinkle with lemon juice. In a bowl, mix brown sugar, flour, cinnamon, margarine, and oats with a fork until combined. Sprinkle evenly over the blueberries. Bake about 30 minutes, until blueberries are bubbly.
