3/4 cup diced onion
2 teaspoons minced garlic
2 teaspoons olive oil
1 cup baked ham, diced
1 teaspoon dried thyme
2 15.5-ounce cans white beans, rinsed and drained
4 cups reduced-sodium chicken broth
2 cups fresh mustard greens, washed and chopped
Salt and pepper to taste
Sauté onion and garlic in oil in large saucepan until tender. Add ham, thyme, beans, and broth and bring to a boil. Reduce heat, cover, and simmer for 20–30 minutes. Add mustard greens and simmer until greens are wilted. Season to taste with salt and pepper.
