Fried Rice

Put away the take-out menu and find out how easy it can be to prepare one of your favorites at home. Serve this tasty vegetarian side dish with a variety of stir-fried vegetables for a healthy, Asian-inspired meal.

Preparation time: 25 minutes (includes cooking time for rice)
Cooking time: 5–8 minutes
Total time: 30–40 minutes

Yield: 4 servings
Serving size: about 3/4 cup

Ingredients

2 cups quick-cooking brown rice
2 tablespoons peanut oil
1 small onion, chopped
1 small green pepper, chopped
1 teaspoon minced garlic
4 green onions, sliced
1/4 cup reduced-sodium soy sauce
1 cup frozen peas, thawed
1/4 cup roasted peanuts
3 teaspoons sesame oil

Preparation

Cook rice according to package directions. Heat peanut oil in large skillet. Add onion, pepper, and garlic and cook until tender, 3–5 minutes. Stir in green onions, soy sauce, and peas and cook 2–3 minutes. Add rice, peanuts, and sesame oil and mix well.
